Based in Sozoranga in the Loja region, Finca Chorora is a highland farm surrounded by cloud forests. Sisters Olinka and Diana focus on modern varietals of arabica combined with experimental processing. This particular coffee is a sweet, 100% Sidra with a carbonic fermentation.

Sidra itself is a varietal that was developed in northern Ecuador and understood to be an adaption of an Ethiopian landrace (heirloom) growing in Ecuadorian soils. But in the last few years it has continued to develop a reputation for cup quality. For this coffee, the cherries were harvested and spend 72 hours prior to spending another 72 hours in tanks flooded with carbon dioxide and lactobacillus extracted from the “juice” of the cherries. The coffee is then pulped and transferred to raised African beds for drying.
