Another exceptional coffee from Ashenafi Argaw, this lot is sourced and processed from cherries in and around Gerbicho, Rogicha and Michicha villages, Guji.
Guji, in Oromia, is one of the classic coffee growing regions of Ethiopia, with fertile, rich soils, high altitude and a suitable climate often producing sparkling washed coffees and juicy, balanced naturals.
Carbonic Maceration takes anaerobic processing (effectively minimising oxygen to allow the yeasts to thrive on the natural sugars but tempering the activity of bacteria, to allow for a very sweet, clean and complex fruity cup as the cherries are allowed to extend in fermentation before drying) to the next level. Flooding the fermentation environment with carbon dioxide helps to control and extend the fermentation further without the risk of any harmful activity and flavours developing.
