In 2024, our direct relationship with Pedro & Katarina Moss (La Huella “Cafe de Panama”) is entering its 9th year, and this partnership has resulted in a galaxy of Great Taste Awards. This lot of coffee – peaberries that have been sorted from Catuai arabica that have undergone a “red honey” process - arises from carefully selected coffee cherries, gently pulped leaving a layer of sticky mucilage, and undergoing an anaerobic fermentation before sun-drying on the raised beds at Alpha 1.

This is a small batch of wonderful peaberries (where two beans have fused together during maturation in the cherry.) Once Pedro has harvested, processed and dried via his red honey method, the beans pass across sizing screens at the mill and the peaberries are essentially separated into one homogenous lot, which can then go through a final hand sorting.
