Quindio is the beautiful heart of the Colombian coffee
belt, and Finca El Placer, in Calarca is owned by fourth
generation producer Sebastian Ramirez who has been
running the estate for over 10 years. He utilises washed,
honey and natural processing with a twist, and has a
beautiful array of heritage varietals, including Geisha, Red,
Pink & Yellow Bourbon and Wush Wush. All processing
undergoes extended, carbonic fermentation and Sebastian
often adds coffee “must” from the cherries to aid flavour
development during the long fermentation. The coffees
are then slowly dried on patios and raised tables.

4th generation farmer and self-styled “coffee designer” Sebastian Ramirez is a rock star of processing. His pioneering techniques have led to global acclaim and his coffees are now a go-to for competition baristas worldwide.
Whole cherries are fermented for 120 hours in carbon dioxide flushed tanks. They are then pulped and co-fermented with fruit glucose and dried fruits for 72 hours before an extended and controlled drying period of 25 days.
Please note we only hold limited stock of these products, but we aim to roast at least two times a week (T&Cs apply)
How to brew
We normally lean toward filter brewing for the producer series as the method highlights the more complex and delicate flavours in lighter roasted coffee. As always, we default to the industry standard of 60g of coffee per litre of water as a starting point.
For espresso try a 1:2.5 brew ratio and shot times of around 24-30 seconds.
Tasting notes
They haven’t made a barista Barbie but this would be her favourite brew. Drift on a cool, jewelled pink pool under the savoury-sweet Malibu sun.
