We’ve known fourth generation coffee producer Delmy Regalado for many years, buying as much of her La Fortuna (a 3-4 hectare farm based in La Labor, Ocotopeque) specialty output as we can each season and supporting the AMPROCAL women’s co-operative that she helped establish in 2007.

CAREFULLY CURATED
An annual favourite from Delmy Regalado, her honey process involves pulping the Pacas & Catuai arabica cherries and leaving a good layer of the sweet, sticky mucilage (the “honey”) on the coffee beans as they slow-dry in the sun. Wonderfully caramelly.
Please note we only hold a limited stock of these products, but we aim to roast at least two times a week (T&Cs apply)

How to brew
We normally lean toward filter brewing for the producer series as the method highlights the more complex and delicate flavours in lighter roasted coffee. As always, we default to the industry standard of 60g of coffee per litre of water as a starting point.
For espresso try a 1:2.5 brew ratio and shot times of around 24-30 seconds.
